Food & Beverage Holding's Bulk Frozen Sugar Yolk shall be prepared from domestically produced eggs that have been stored under refrigerated conditions immediately after collection. The eggs shall be detergent washed, sanitized, and manually inspected prior to breaking. The eggs shall be mechanically broken, separated, and filtered under USDA supervision. All ingredients and packaging shall meet or exceed written parameters established by Food & Beverage Holding. Sugar will be incorporated into the liquid egg prior to thermo-processing with the use of an industrial blender at 10 %. The liquid sugared egg yolk shall then be pasteurized to meet or exceed established regulations 9CFR590.570, chilled to 40 F or below, and stored in jacketed, refrigerated tanks. The sugar yolk is then packaged, coded, palletized, and placed into a commercial blast freezer at 5 F or below. All frozen egg products shall be stored at 5 F or below. Frozen Sugar Yolk shall be shipped in refrigerated vehicles.
