About Cocoa Powder

Cocoa powder is produced by pressing cocoa liquor to extract most of the cocoa butter, leaving a dry cake that is then milled to a fine powder. The two main commercial types — natural (non-alkalised) and alkalised (Dutched) — have markedly different characteristics. Natural cocoa powder is lighter brown, slightly acidic (pH roughly 5.0–6.0) and delivers a sharper, more intense chocolate note; it reacts with baking soda in leavened bakery applications. Alkalised cocoa powder is treated with an alkali solution to neutralise acidity, producing a darker colour, milder flavour and much better solubility in water or milk — this is the grade most buyers in the beverages, dairy and coatings markets specify.

Fat content is the second key specification: standard cocoa powder runs 10–12% fat (sometimes labelled low-fat or medium-fat), while high-fat grades at 20–22% fat give a richer mouthfeel and are used in premium drinking chocolate and certain coating applications. Colour value (expressed as Minolta L*, or visually from light brown to near-black for heavily alkalised grades) is increasingly important for beverage and dairy end users who want consistency across production runs.
