Food & Beverage Holding's Bulk Frozen Egg Whites shall be prepared from domestically produced eggs that have been stored under refrigerated conditions after collection. The eggs shall be detergent washed, sanitized, and manually inspected prior to breaking. The eggs shall be mechanically broken and separated under USDA supervision. The liquid eggs shall then be pasteurized to meet or exceed established regulations 9CFR590.570, chilled to 40 F or below, and stored in jacketed, refrigerated tanks. The eggs are then packaged, coded, and palletized. All wholesale frozen egg white products shall be frozen in a commercial blast freezer and stored at 5 F or below. Frozen egg products shall be shipped in refrigerated vehicles.
