Frozen Egg Yolk shall be prepared from domestically produced eggs that have been stored under refrigerated conditions immediately after collection. The eggs shall be detergent washed, sanitized, and manually inspected prior to breaking. The eggs shall be mechanically broken, separated, and filtered under USDA supervision. The eggs are then packaged, coded, palletized, and frozen in a commercial blastfreezer. All frozen egg products shall be stored at 5F or below and shipped in refrigerated vehicles.
